Servings: Makes 9 Spring Rolls 

Recipe time: 1 Hour

Ingredients for Chicken Spring Rolls Recipe

2 Tbsn Olive Oil
100g Chopped Spanish Onion
2 Tbsp Finely Chopped Garlic
2 Tbsp Finely Chopped Ginger
115g Finely Sliced Carrot Sticks
400g Thin Chicken Breast Strips
Salt And Pepper Seasoning
50g Spring Onions
25g Coriander
100g Beanshoots
9 X 250mm X 250mm Spring Roll Sheets
Little Water For Sticking
Vegetable Oil ( 1.5 To 2 Litres)


Step 1: Sauteing the vegetables


Heat up the olive oil in a hot pan and add in the onions, ginger and garlic. Saute for few minutes. Add in the carrots, chicken salt and pepper for approx 10 mins.


Step 2 : Adding in the more tender ingredients
Add the spring onions, coriander and beanshoots and cook for few minutes.

Step 3: Rolling the spring rolls
Lay a 250 x 250 spring roll sheets onto the table. Place a small amount of the chicken and vegetable mixture , at the bottom and roll up. Dapping the edges with water helps stick the spring roll pastry. 
TIP: Lay a damp cloth over the rest of pastry to avoid drying out, whilst you roll them individually.

Step 4: Frying the spring rolls
Put enough vegetable oil into the pan to fry the rolls. Heat up oil to medium heat.
Gently place 3 to 4 rolls at a time, and fry till golden brown. Approx 5 minutes.
Serve with hoisin sauce, sweet chilli sauce or preferred dips. Enjoy.
