Sweet and sour chicken, is a velveted chicken pieces, which are served in a tangy sauce,made from a balance of sweet and sour flavours. Most of made with vinegar and sugar, or fruit juice.

Recipe Time: 1 hour 15 minutes
Ingredients for Sweet and Sour chicken -
150ML Pineapple juice
20g Sliced ginger
200ML Malt vinegar
2 TBSP Soya sauce
2 Sliced garlic cloves
60g Brown Sugar
Salt and pepper
1 TBSP Tom puree
Approx 80ML water
Squeeze of orange
2TSP Cornflour slurry
50g Julienne Carrots
130g Pineapple chunks
650g Diced chicken breast
Cornflour
Vegetable oil
150g Chopped onion
150g chopped red and green peppers
Step 1: Making the sweet and sour sauce
Add the PIneapple juice, vinegar, ginger,soya sauce, garlic, sugar, Tomato puree ,
Salt and pepper, Squeeze of orange and water to a pan, and Simmer for 20 minutes.
Step 2: Thickening the Sauce
Mix 2 Tsp cornflour with a little water to create a slurry.
Add the surry to the sweet and sour sauce, and simmer until thickened, stirring continuously.
Strain and add back to the pan.
Step 3: Finishing the sweet and sour sauce
Add the carrots and pineapple chunks to the sauce.
Simmer for few minutes.
Step 4: Preparing the chicken
Dip the diced chicken into the egg, and then into the cornflour.
Note: This process is called velveting the chicken
Step 5: Frying the chicken
Add the chicken to the medium hot oil and fry for 10 minutes.
Strain onto kitchen paper.
Step 6: Finishing the sweet and sour chicken
Heat up 1 TBSP Vegetable oil in the pan. Add the chopped onion and peppers, and saute for few minutes. Add the cooked chicken, followed by the sauce, and mix. Enjoy.
